Ingredients
- Tau Suan – 1 portion
- All-purpose flour – 250 g
- Granulated sugar – 200 g
- Butter – 150 g
- Eggs – 3 large
- Baking powder – 1 tsp
Steps
- Preheat your oven to 175°C (350°F) and prepare your baking dish by greasing it lightly.
- Cream butter and sugar together until pale and fluffy, about 4 minutes in a stand mixer.
- Beat in the eggs one at a time, then fold in the dry ingredients for Tau Suan with gentle strokes to avoid deflating the batter.
- Pour into the prepared dish and level the top with a spatula.
- Bake for 30–35 minutes until a skewer inserted in the center comes out clean. Check at 25 minutes to avoid over-baking.
- Cool in the pan for 15 minutes, then transfer to a rack. Dust with powdered sugar or add the traditional topping before serving.
