  • 1 cup Short-grain rice (Use Japanese-style rice for best texture)
  • 4 sheets Nori seaweed sheets (Available at most supermarkets)
  • 1/2 medium Carrot (Julienned)
  • 1/2 medium Japanese cucumber (Julienned)

Instructions

  1. 1

Rinse the short-grain rice under cold water until the water runs clear. Cook rice according to package instructions. Once done, fluff gently and let cool slightly.

Season rice while it’s still warm for best absorption.

Prepare the fillings: julienne the carrot and cucumber, slice the avocado thinly, and slice pressed tofu into strips.

    5 minutes

Pat vegetables dry to prevent soggy rolls.

Browning adds flavour and texture to the tofu.

Why This Dish is Healthy

This dish is naturally low in fat, cholesterol-free, and high in fibre, making it ideal for weight management and heart health. The combination of complex carbohydrates from rice, lean protein from tofu, and healthy fats from avocado ensures balanced energy without excess calories. The absence of deep-frying and minimal oil make this a light yet satisfying lunch option for anyone following a healthy Singaporean diet.

Seaweed Rice Rolls are packed with vitamins and minerals, thanks to the fresh vegetables, nori, and tofu. Nori is a great source of iodine, vitamin A, and C, while tofu offers plant-based protein and calcium. The colourful vegetables add dietary fibre, antioxidants, and a boost of vitamin K. Using low-sodium soy sauce and minimal added sugar keeps sodium and calories in check, making this dish suitable for most health-conscious diets.
