Chomp Chomp does not really exist before sunset. Drive through Serangoon Garden in the afternoon and it is a quiet shed near the Circus roundabout; come back at eight and the car park is full, the charcoal is lit and half of north-east Singapore is angling for a table. Opened in 1972 and named for its Teochew nickname Tiong Tiong, this is one of Singapore's best-known supper hawker centres, and it plays the hits: sambal stingray blistering on banana leaf, Hokkien mee heavy with wok hei, satay by the fistful, and the famous oversized mugs of sugarcane juice that arrive sweating in the humidity. The name is a loose adaptation of its Teochew nickname Tiong Tiong, and the centre has fed this leafy north-eastern neighbourhood since it opened in 1972. It keeps hawker hours in reverse: shuttered and sleepy through the day, roaring from late afternoon until around 1am.
